Erosion is slow until it is not. Mulch migrating onto the walkway, bare channels cut into a slope, exposed tree roots, soil piling up against the fence line, and a hillside that gets a little steeper and a little barer every season. Each storm takes a bit more, and the fix gets larger the longer it waits.
Controlling erosion means slowing water down, giving it a defined path, and covering bare soil with something that holds. Depending on the slope and how much water is moving across it, that could be terracing with a retaining wall, building a stone-lined swale, installing deep-rooted plantings, or a combination of all three.

Sod plus erosion fabric gives you immediate protection, which matters if rain is coming. For a long-term fix on a steep grade, terracing with a wall or planting deep-rooted material is what actually holds.
On mild to moderate slopes with reasonable runoff, yes, especially deep-rooted grasses and groundcovers. Steep grades or areas taking concentrated flow generally need structure as well.
